The word ‘Amaro’ literally means ‘bitter’. The flavour spectrum is broad, ranging from very light to ultra-rich. It is typically made by macerating herbs & roots in alcohol and then sweetened.

History of Amaro

Recipes can date back hundreds of years originating from monasteries or pharmacies. For example, through prohibition and up until the 1940’s, one Italian Amaro, Fernet Branca was actually sold in pharmacies and was used in hospitals as a cure for cholera.

We showcase an extensive library and ever-growing collection of Amaro sourced from all over the world, many of which are exclusive to our venue.

A De Vine Amaro Experience

Enjoy a three-course Amaro and cocktail tasting. Here you will learn about how it’s made, its history and most importantly how to drink it. Tasting several styles neat and in a cocktail. This can all be matched with a specialised menu by our Head Chef, Timothy Fisher.
